Red Cabbage and Chickpea Salad recipe
An easy and simple Red Cabbage and Chickpea salad is a hearty and savory way to start any meal. Tender chickpeas and zesty red cabbage are tossed with crunchy vegetables and tahini salad dressing and refrigerate until marinated. Serve alongside a burger or stuffed pita for a hearty meal anytime.
Ingredients:
- 1 (16 oz) can chickpeas, rinsed and drained
- 1 c. red cabbage, shredded
- ½ c. tomato, chopped
- 1 Tbsp onion, minced
- salt and pepper, to taste
- 2 Tbsp tahini salad dressing
Directions:
In large bowl combine chickpeas, red cabbage, tomato, and onion. Toss to combine.
Season with salt and pepper, and toss with salad dressing until evenly coated.
Cover, and refrigerate 1 hour or until ready to serve.
